Ingredients

  • 4 cups arugula
  • 1 cup farro, cooked
  • 1 apple, chopped
  • 1 pear, chopped
  • 1/4 cup dried cranberries
  • 1/4 cup walnuts or pecans
  • 1/4 cup feta or goat cheese (more or less as desired)
  • Olive oil and balsamic or red wine vinegar to dress

Instructions

  1. Combine all ingredients into a bowl and toss to evenly disperse the ingredients.
  2. Drizzle with olive oil and vinegar
